    Why should I come?
    It is a well known fact that the Mediterranean diet is one of the healthiest in the world. Come and learn about eating healthy without compromising on taste!
    Who is going to be there?
    Anyone who wants to look after their health but still loves to eat! Plus its something different to do during the week . A unique alternative way to get fed and learn something new!
    What will the evening bring?
    We will get to know each other a little and have a lovely dip with veggies. We will then work with Polenta, and make a luxurious heirloom tomato dish I will bring a gorgeous Chicken dish for you to eat.. Later you can eat your food on the night or you can take it home to eat with your good self or share with your family. You will go home with all the recipes from the night.
    So what’s on THE MENU?
    Starter - Sun dried tomato and fava bean dip with raw veggies
    Mains – Mediterranean Chicken with roasted red pepper pesto
    Marinated heirloom tomatoes with baby spinach and pomegranate jewels
    Herb and garlic Polenta slices
    (If you are a vegetarian just let me know and I will prepare your dish separately
    *Please note group bookings of 10 or more people non vegetarian and vegetarian menus, I can organise an exclusive night for you.
    Can I bring alcohol?
    Absolutely it’s a bit like a supper club with a foodie class combined!!
    Do I need to bring anything?
    Just your good self, a small food container and an apron.
    There will be shop items to buy on the night.

    Vegan Mexican is one to watch! This fresh colourful, tasty cuisine is perfect for vegans. Come and learn about eating healthy without compromising on taste!

    Who is going to be there?
    Anyone who wants to look after their health but still loves to eat! Plus its something different to do during the week . A unique alternative way to get fed and learn something new!

    What will the evening bring?
    We will get to know each other while munching on some homemade salsas and corn tortilla chips. We will learn to make different flavored gluten free mexican corn tortillas and charred corn, a pineapple salsa.and guacamole with cumin. Later you can eat your food on the night or you can take it home to eat with your good self or share with your family. You will go home with all the recipes from the night.

    So what’s on THE MENU?

    Starter - Mexican charred sweetcorn on the cob, coated with creamed coconut, honey and mild roasted chilli powder

    Mains - Chickpea and spinach tacos
    Cauliflower picadilla with roasted walnuts and mushrooms
    Mexican black beans in epazote (eaten with your handmade tacos)

    Dessert - Vegan chocy ice cream

    Chillies and Moles Foodie Course
    Who is this course for?
    Chefs and adventurous home cooks alike.
    How long does each class last?
    Once a week for four weeks each class lasts around 2 – 3 hours (this course can be done at your place of work or your home)
    What will we cover on this 4 week course ?
    Chillies
    From mild fresh green or red salsas, to punishing habanero purees, Most salsas in Mexico include fresh or dry, mild or hot chillies as one of their ingredients. Mexican salsas are an essential part of the cuisine and contrary to popular belief they are used as an accompaniment to a meal rather than a dipping salsa. On this 4 week course you will learn to work with fresh and dried chillies and create simple salsas to complex moles. What you will learn in four weeks will be fundamental in understanding and preparing authentic Mexican recipes. This course will give you an edge when it comes to cooking authentic Mexican food You will learn the techniques to work with fresh and dry chillies. We will prepare several salsas as we work through the different chillies.
    Moles
    Are the most exquisite and complex sauces in Mexican gastronomy. Most mole recipes include between 25 and 30 ingredients, which are added gradually and in a certain order while cooking. The dark mole is the one with chocolate added and this is the one that is mass produced in jars. We will work through some of the sacred seven moles of Oaxaca. At the end of the course you will have the special knowledge needed to wow your friends, family or customers.
